A light and nutritious Spinach Feta Egg White Wrap featuring whole wheat tortilla filled with a savory blend of egg whites, spinach, sun-dried tomatoes, cream cheese, and tangy feta cheese. Perfect for a healthy breakfast or quick meal packed with protein and flavor.

Ingredients

Wrap

  • 1 whole wheat tortilla
  • 1 teaspoon olive oil

Filling

  • 2 tablespoons sun-dried tomatoes, oil-packed, finely chopped
  • 1 cup spinach, roughly chopped
  • 1/3 cup liquid egg whites
  • 2 tablespoons cream cheese
  • 2 tablespoons feta cheese, crumbled
  • 1 pinch salt
  • 1 pinch black pepper

Instructions

  1. Prepare the Filling: In a bowl, combine the liquid egg whites, chopped sun-dried tomatoes, roughly chopped spinach, cream cheese, feta cheese, salt, and black pepper. Mix thoroughly to ensure all ingredients are evenly distributed.
  2. Cook the Filling: Heat 1 teaspoon of olive oil in a non-stick skillet over medium heat. Pour the egg white mixture into the skillet and cook gently, stirring occasionally, until the egg whites are set and spinach is wilted, about 3-4 minutes.
  3. Assemble the Wrap: Warm the whole wheat tortilla slightly in the pan or microwave to make it pliable. Place the cooked filling onto the center of the tortilla.
  4. Wrap and Serve: Fold the tortilla around the filling to form a wrap. Optionally, place back in the skillet, seam side down, and cook for 1-2 minutes to seal and lightly toast the wrap. Serve warm.

Notes

  • You can substitute cream cheese with Greek yogurt for a lighter option.
  • For extra flavor, add a pinch of crushed red pepper flakes or herbs like oregano or basil.
  • Use low-fat feta cheese to reduce fat content.
  • This wrap is great for meal prep; store the filling separately and assemble fresh when ready to eat.
