Ingredients

Cauliflower Mash

  • 2 tablespoons olive oil
  • 1 head cauliflower, cut into small florets (about 6 cups)
  • 3 cloves garlic, minced
  • 1 cup milk
  • 3 cups vegetable or chicken broth
  • 1 (14-ounce) can white beans, rinsed and drained
  • 1/2 cup cornmeal
  • 1/2 cup shredded cheese (sharp cheddar or havarti)
  • 1 teaspoon salt

Garlic Kale

  • 3 cups kalettes or chopped kale
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil

Spicy Shrimp

  • 1 1/2 lb. shrimp, peeled and deveined
  • A few good shakes of garlic salt
  • A few good shakes of chili powder
  • A few good shakes of cayenne pepper
  • A few good shakes of black pepper
  • 1 tablespoon olive oil

Instructions

  1. Prepare Cauliflower Mash: Heat olive oil in a large soup pot over medium heat. Add cauliflower florets and minced garlic, sautéing for 1-2 minutes until the garlic becomes fragrant. Pour in milk and 2 cups of broth, then simmer for about 10 minutes or until cauliflower is tender. Add rinsed white beans and roughly mash the mixture with a wooden spoon. It will be somewhat soupy, which is fine. Stir in cornmeal to thicken, adjusting consistency by adding the remaining 1 cup of broth as needed. Mix in shredded cheese and salt to taste.
  2. Sauté Garlic Kale: Heat olive oil in a nonstick skillet over medium-low heat. Add chopped kale (or kalettes) and minced garlic, sautéing until the greens soften. For kalettes, add a splash of water towards the end to steam them lightly. Remove kale from skillet and wipe the pan clean with a paper towel.
  3. Cook Spicy Shrimp: In the same skillet, heat olive oil over medium heat. Pat shrimp dry and place them in the skillet. Season generously with garlic salt, chili powder, cayenne pepper, and black pepper. Cook shrimp for a few minutes until they turn pink and opaque. Add about 2 tablespoons of water or broth to the pan to deglaze, creating a flavorful saucy coating from the browned bits and spices. Stir to coat shrimp and cook for another minute.
  4. Serve: Plate the creamy cauliflower mash, top with sautéed garlic kale, and arrange the spicy shrimp over the top. Enjoy this balanced and flavorful dish!

  • You can substitute kalettes with regular kale if unavailable.
