This Spicy Buffalo Chicken Pasta recipe combines tender chicken breast seasoned with Cajun spices, a creamy blend of cream cheese and blue cheese, and a tangy, spicy Buffalo sauce to create a flavorful, comforting dish. Ingredients

For the Pasta and Chicken

  • 2 cups pasta noodles (cavatappi or penne)
  • 1 pound chicken breast, chopped
  • 1 tablespoon Cajun seasonings
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 jalapeno pepper, chopped (or any spicy pepper)
  • 4 cloves garlic, chopped

For the Sauce

  • 4 ounces cream cheese
  • 5 ounces crumbled blue cheese (divided)
  • 1 cup Buffalo sauce (or more to taste)
  • 2 tablespoon apple cider vinegar
  • 1 tablespoon Worcestershire sauce

For Serving

  • Spicy chili flakes
  • Fresh chopped parsley or cilantro

Instructions

  1. Boil Noodles: Add 4 cups of water and 2 teaspoons of salt to a large pot and bring it to a boil. Add the pasta noodles and cook for 8-10 minutes or until al dente, according to package instructions. Drain once done.
  2. Cook Chicken and Vegetables: While the pasta cooks, heat olive oil in a large pan over medium heat. Season the chopped chicken with Cajun seasoning, then add to the pan along with the chopped onion and jalapeno pepper. Cook for 5-6 minutes, stirring occasionally, until the chicken is cooked through and the vegetables are softened.
  3. Add Garlic: Stir in the chopped garlic and cook for an additional minute, allowing the garlic to release its aroma without burning.
  4. Add Cheeses and Sauce: Lower the heat slightly and add the cream cheese, 3 ounces of crumbled blue cheese, Buffalo sauce, apple cider vinegar, and Worcestershire sauce. Stir continuously until the cheeses melt completely and the sauce is creamy and well combined.
  5. Combine Pasta and Sauce: Add the drained pasta noodles directly into the pan with the sauce. Toss well to coat all the noodles evenly with the spicy buffalo cheese sauce.
  6. Garnish and Serve: Remove the pan from heat. Sprinkle the remaining 2 ounces of blue cheese over the pasta, garnish with spicy chili flakes, and fresh chopped parsley or cilantro. Serve immediately for best flavor and texture.
