This homemade soy yogurt recipe yields a creamy, delicious vegan alternative to traditional dairy yogurt, made using unsweetened plain soy milk and probiotics. Prepared using an Instant Pot's yogurt setting, it offers a simple, natural way to enjoy plant-based yogurt with live cultures at home.

Ingredients

Ingredients

  • 1 32 oz. container of unsweetened plain soy milk (water and soybeans as the only ingredients)
  • 5 probiotic capsules with 2.4 billion CFUs

Instructions

  1. Prepare Soy Milk: Add the contents of a new, factory-sealed container of soy milk directly into a clean Instant Pot insert.
  2. Add Probiotics: Open the 5 probiotic capsules and add their contents to the soy milk in the Instant Pot to introduce the live cultures.
  3. Mix Thoroughly: Whisk the soy milk and probiotic mixture well until completely blended for an even distribution of cultures.
  4. Set Instant Pot: Press the yogurt button on the Instant Pot and adjust the fermentation time to 15 hours using the + sign to cultivate the yogurt properly.
  5. Close Lid and Vent: Place the Instant Pot lid on top and ensure the valve is turned to the vent position to allow humidity to escape during incubation.
  6. Incubate: Let the soy milk ferment for 15 hours; wait for the yogurt timer to beep signaling completion.
  7. Drain Excess Water: After incubation, use a spoon to skim off any whey or water that has formed on the top of the yogurt.
  8. Cool and Store: Allow the yogurt to cool to room temperature, then transfer it to sealed containers for refrigeration.
  9. Reserve Starter: Save ½ cup of the prepared yogurt with no additives to use as a starter culture for your next batch.

Notes

  • Use a clean, sterilized Instant Pot insert and utensils to avoid contamination during fermentation.
  • Do not use sweetened or flavored soy milk to ensure proper fermentation.
  • Keep the valve vented during the yogurt setting to maintain optimal humidity levels.
  • The longer fermentation time results in tangier and thicker yogurt.
  • Reserved yogurt starter can be stored in the refrigerator and used within one week.
