Ingredients

For the Sauce

  • 1 cup heavy cream

Pasta and Toppings

  • 12 ounces rigatoni, cooked according to package directions
  • 2 balls burrata cheese, at room temperature
  • Red pepper flakes (optional, for topping)
  • Smoked salt or flaky salt (optional, for topping)

Instructions

  1. Puree Tomatoes: In a food processor or blender, puree the entire can of fire roasted tomatoes along with their juices until nearly smooth.
  2. Boil Pasta Water: Bring a large pot of generously salted water to a boil for cooking the rigatoni.
  3. Sauté Aromatics: Heat the olive oil and butter over medium heat in a large skillet. Add minced shallot and sauté for 3-5 minutes until softened. Add minced garlic and cook for an additional 30 seconds until fragrant.
  4. Add Tomato Paste: Stir in the tomato paste and cook for 1 minute to deepen its flavor.
  5. Simmer Sauce: Add the pureed tomatoes and smoked paprika to the skillet. Bring to a simmer and let cook gently for about 10 minutes as the pasta cooks.
  6. Cook Pasta: Add rigatoni to the boiling salted water and cook until al dente, about 1–2 minutes less than package directions. Reserve ½ cup pasta water before draining.
  7. Finish Sauce: Stir the heavy cream and parmesan cheese into the simmered sauce. Season with salt and pepper to taste.
  8. Toss Pasta in Sauce: Combine the drained pasta with the sauce, stirring well to coat. Add reserved pasta water a little at a time if the sauce needs thinning.
  9. Serve with Burrata and Toppings: Plate the pasta and top with torn burrata cheese. Sprinkle with red pepper flakes and smoked salt if desired. Serve immediately and enjoy!
