Ingredients

Beef and Seasonings

Slow Cooker Mixture

  • 2 cups beef broth, divided
  • 1 small yellow onion, thinly sliced
  • 6 cloves garlic, smashed
  • 1 dried bay leaf
  • 1 tablespoon Italian seasoning
  • 8 oz sliced pepperoncini peppers, plus 1/4 cup juice
  • 8 oz mild giardiniera, drained (plus more for serving)

For Serving

  • 4-6 crusty Hoagie Rolls or French sub rolls
  • Melted butter, for brushing rolls
  • Garlic aioli
  • Sliced provolone cheese
  • Sliced pepperoncini peppers, for topping
  • Additional giardiniera, for topping

Instructions

  1. Heat Skillet: Heat a large cast iron skillet over medium-high heat until hot and ready for searing.
  2. Prepare Beef: Pat the chuck roast dry with paper towels, then sprinkle half of the kosher salt and freshly cracked black pepper on one side of the roast.
  3. Sear Beef: Add olive oil to the skillet. Place the chuck roast salt-side down in the skillet. Sprinkle the remaining salt and black pepper on the other side. Sear the beef for 6-8 minutes on each side, developing a golden brown crust. Remove beef and transfer to slow cooker.
  4. Deglaze Skillet and Cook Aromatics: Lower heat and add 1/4 cup beef broth to the skillet, scraping up browned bits. Return heat to medium-high, then add sliced onions and smashed garlic. Cook for 2-3 minutes until onions soften.
