This Slow Cooker Beef Manhattan is a comforting, hearty dish featuring tender shredded beef cooked with onion soup and brown gravy mixes, served over garlic toast layered with creamy mashed potatoes. Slow-cooked to perfection, it delivers rich flavors and a satisfying meal, perfect for a cozy family dinner.

Ingredients

Beef and Sauce:

  • 2 to 3 pounds beef chuck roast, cut into large chunks
  • 1 packet onion soup mix
  • 1 packet brown gravy mix
  • ¼ cup red wine vinegar

Serving:

  • 4 cups prepared mashed potatoes
  • 6 to 8 slices prepared garlic toast

Instructions

  1. Prepare the beef: Place the chuck roast pieces into a 4-quart slow cooker, ensuring they are evenly distributed for even cooking.
  2. Add seasonings and liquid: Sprinkle the onion soup mix and brown gravy mix evenly over the beef. Pour the red wine vinegar over the top to add acidity and depth of flavor.
  3. Slow cook the beef: Cover the slow cooker with its lid and cook on low for 6 to 8 hours, or alternatively on high for 4 hours, until the beef is very tender and easy to shred.
  4. Shred the beef: Using two forks, shred the beef directly in the slow cooker to absorb the juices and gravy fully.
  5. Assemble the Beef Manhattan: On each serving plate, place slices of garlic toast. Spoon a layer of warm mashed potatoes over the toast, then top generously with the shredded beef and au jus from the slow cooker. Serve immediately.

Notes

  • Use prepared mashed potatoes and garlic toast to save time; homemade versions also work well.
  • For added flavor, you can add sliced onions or mushrooms to the slow cooker before cooking.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop or microwave.
  • If you prefer a thicker gravy, mix a tablespoon of cornstarch with water and stir into the slow cooker juices before shredding the beef, then cook until thickened.
  • This recipe pairs well with steamed green vegetables or a fresh side salad.
