Ingredients

Potatoes

  • 5 small to medium potatoes, peeled and cubed

Sloppy Joe Mixture

  • 1 lb ground beef
  • 1 onion, chopped
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tbsp garlic, minced
  • 1-2 tbsp Worcestershire sauce
  • 8 oz tomato sauce
  • ¼ cup ketchup
  • 1 tbsp yellow mustard
  • 2 tbsp BBQ sauce

Topping

  • 1½ cups shredded cheese (Colby Jack, mozzarella, cheddar, or preferred cheese)
  • Dried parsley, for garnish

Instructions

  1. Prepare Potatoes: Peel and cut the potatoes into bite-sized cubes. Toss them with olive oil, salt, black pepper, garlic powder, and paprika until evenly coated to ensure they are well seasoned before cooking.
  2. Air Fry Potatoes: Place the seasoned potatoes in an air fryer basket and air fry at 400°F (200°C) for 20–25 minutes. Shake the basket a few times during cooking to cook evenly until the potatoes are golden brown and crispy.
  3. Cook Ground Beef and Onions: While the potatoes are cooking, heat a large oven-safe skillet over medium-high heat. Add the ground beef and chopped onion. Cook, breaking the beef apart with a spatula, until the beef is browned and the onions are softened. Drain excess grease if necessary.
  4. Season Meat Mixture: Add salt, black pepper, onion powder, and paprika to the meat mixture. Stir in the minced garlic and cook for an additional 30 seconds to allow flavors to deepen.
  5. Add Sauces and Simmer: Stir in Worcestershire sauce, tomato sauce, ketchup, yellow mustard, and BBQ sauce into the skillet. Reduce heat to low and simmer the mixture until the sauce thickens and flavors meld together.
  6. Combine Potatoes and Meat: Add the crispy air-fried potatoes into the sloppy joe mixture. Gently stir everything to combine without breaking the potatoes.
  7. Add Cheese and Broil: Evenly sprinkle the shredded cheese over the top of the combined mixture in the skillet. Place the skillet under the oven broiler for 2–3 minutes or until the cheese is melted, bubbly, and slightly golden.
  8. Garnish and Serve: Remove from broiler, sprinkle dried parsley over the top for a fresh garnish, and serve the skillet hot for a delicious meal.
