Ingredients

Soup Base

  • 6 cups chicken stock
  • 2 1/2 tablespoons sesame oil (plus more for the stock)
  • 1/8 teaspoon white pepper (plus more for the stock)
  • 1/2 teaspoon salt (plus more for the stock)
  • 1 tablespoon soy sauce
  • 2 tablespoons Shaoxing wine
  • 1 scallion, chopped

Vegetables

  • 10 oz. baby bok choy, shepherd's purse, or other similar leafy green vegetable

Wontons

  • 1 package wonton wrappers

Instructions

  1. Prepare the Stock: In a large pot, heat the chicken stock over medium heat. Add a splash of sesame oil, a pinch of white pepper, salt to taste, soy sauce, and Shaoxing wine. Stir well to combine and allow the flavors to meld while warming the broth gently.
  2. Prepare the Vegetables: Rinse the baby bok choy or leafy greens thoroughly. Chop into bite-sized pieces and set aside. Chop the scallion finely to use as garnish later.
  3. Assemble the Wontons: Lay out the wonton wrappers on a clean surface. Place a small amount of preferred filling (commonly seasoned ground pork or shrimp) in the center of each wrapper. Moisten the edges with water, fold the wrappers diagonally to form triangles, and press edges to seal tightly. Optionally, fold and pinch the wontons into traditional shapes.
  4. Cook the Wontons: Bring the prepared stock to a gentle simmer. Carefully add the wontons to the pot, stirring gently to prevent sticking. Cook for 4-6 minutes or until the wontons float to the surface and are cooked through.
  5. Add the Vegetables: Add the chopped baby bok choy to the simmering soup in the last 2-3 minutes of cooking to keep them tender-crisp.
  6. Finish and Serve: Taste the broth and adjust seasoning if needed with additional soy sauce, salt, or white pepper. Ladle the wonton soup into bowls, garnish with chopped scallions, and drizzle a little extra sesame oil on top for aroma. Serve hot.
