Ingredients

Tortilla Crust

  • 2 large (burrito size) tortillas or 5-6 small tortillas

Egg Mixture

  • 6 large eggs (for oven) or 3-4 large eggs (for air fryer)
  • 1/3 cup cottage cheese
  • Salt and pepper to taste

Vegetables and Cheese

  • 1/3 cup chopped spinach
  • 1/2 cup sliced tomatoes or cherry tomatoes
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 375°F (190°C). Spray a 9-inch pie dish with cooking spray to prevent sticking. If using the air fryer, select a metal pie or cake pan that fits inside your air fryer basket.
  2. Form the Tortilla Crust: Layer the tortillas in the pie dish overlapping them so the edges stick up around the sides like a crust and the bottom is fully covered. Press the tortillas firmly into the pan to create an even base.
  3. Mix the Egg Filling: In a medium bowl, crack the eggs and add the cottage cheese along with salt and pepper. Whisk thoroughly until the mixture is fully blended, with no white streaks and slightly frothy on top.
  4. Assemble the Quiche: Pour the egg and cottage cheese mixture evenly over the tortilla crust. Sprinkle the chopped spinach evenly on top, then arrange the sliced tomatoes. Finally, top the quiche with shredded cheddar cheese in an even layer.
  5. Bake in Oven: Place the pie dish on the middle rack of the preheated oven and bake for 25-30 minutes, or until the eggs are fully set and the tortilla crust is golden brown.
  6. Or Air Fryer Method: For air fryer preparation, use 3-4 eggs in the filling. Place the quiche assembly into an 8-inch metal pan that fits into your 8-quart air fryer. Air fry at 300°F (149°C) for 17-20 minutes, monitoring closely as times and temperatures may vary.
  7. Cool and Serve: Once cooked, remove the quiche from the oven or air fryer and allow it to cool for 10-15 minutes. Slice and serve warm. Enjoy your delicious and simple quiche!

Notes

  • Pre-spraying the pie dish is essential to prevent the tortillas from sticking.
  • Adjust the number of eggs if making a smaller quiche in the air fryer.
  • Fresh spinach can be substituted with frozen spinach, just be sure to drain any excess moisture before adding.
  • You can use either sliced regular tomatoes or cherry tomatoes, whichever you prefer.
  • Keep an eye on the quiche while air frying, as cook times may vary based on the air fryer model.
