Ingredients

White Chocolate Custard

  • 6 tablespoons (40 g) cornstarch
  • 2 tablespoons (22 g) white sugar
  • 2 large eggs
  • Pinch of salt
  • 2 cups (480 g) milk
  • 1 ½ teaspoons vanilla extract
  • 3.5 oz (100 g) white chocolate, chopped

Chestnut Cream (Sweet Chestnut Purée)

  • 1 cup (200 g) cooked chestnuts, packed
  • ⅔ cup (200 g) sweet chestnut spread
  • 4 tablespoons water (add gradually)

Base

  • 18 savoiardi biscuits
  • ½ cup milk

For Serving

  • Icing sugar
  • White chocolate curls

Instructions

  1. Prepare the White Chocolate Custard: In a mixing bowl, whisk together the cornstarch, white sugar, eggs, and a pinch of salt until smooth. In a saucepan, heat the milk over medium heat until it just starts to simmer. Gradually pour the hot milk into the egg mixture, whisking constantly to temper the eggs. Return the mixture to the saucepan and cook over medium-low heat, stirring continuously until it thickens. Remove from heat, stir in vanilla extract and chopped white chocolate until fully melted and smooth. Set aside to cool.
  2. Make the Chestnut Cream: Combine the cooked chestnuts and sweet chestnut spread in a food processor or blender. Gradually add water while blending until the mixture reaches a smooth and spreadable consistency. Adjust water quantity as needed.
  3. Prepare the Biscuit Base: Lightly dip the savoiardi biscuits in milk just long enough to soften them slightly without making them soggy. Arrange the soaked biscuits evenly in a serving dish or individual dessert glasses as the base layer.
  4. Assemble the Mont Blanc: Spoon an even layer of the white chocolate custard over the biscuit base. Then, pipe or spoon the chestnut cream over the custard layer to create the signature Mont Blanc texture and appearance. Smooth or sculpt the chestnut cream as desired.
