A vibrant and refreshing Simple Grilled Peach Salad combining smoky grilled peaches with fresh greens, aromatic herbs, crunchy toasted almonds, and a tangy honey balsamic dressing. Perfect as a light lunch or a side dish during warm weather.

Ingredients

Salad Ingredients

  • 4 peaches
  • 2 cups baby arugula
  • 2 cups baby spinach
  • ½ cup loosely packed basil leaves
  • ¼ cup loosely packed mint leaves
  • ½ English cucumber, halved and thinly sliced
  • ½ cup sliced almonds, toasted

Dressing

  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 4 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon cracked black pepper

Instructions

  1. Prepare the Peaches: Halve the peaches and remove the pits. Rub the cut and outer sides with a bit of olive oil to prevent sticking during grilling.
  2. Grill the Peaches: Place the peaches cut-side down on a medium heat grill. Grill for 4-5 minutes per side until they develop a nice char and become slightly soft.
  3. Cool and Dice: Let the peaches cool enough to handle. Peel off the skin, which should come off easily in one piece. Dice the grilled peach halves into bite-sized pieces.
  4. Assemble the Salad: In a large bowl, toss together baby arugula, baby spinach, basil, and mint leaves. Layer the thinly sliced cucumber over the greens.
  5. Add Peaches and Dressing: Arrange the diced grilled peaches on top of the salad. Drizzle the salad with the honey balsamic dressing made by whisking balsamic vinegar, honey, olive oil, salt, and pepper.
  6. Garnish and Serve: Sprinkle the toasted sliced almonds over the salad. Serve immediately to enjoy the fresh and vibrant flavors.

Notes

  • You can substitute peaches with nectarines for a slightly different flavor.
  • Make sure to toast the almonds lightly for maximum crunch and flavor.
  • To peel peaches easily, grilling softens the skin for effortless removal.
  • This salad is best served fresh to keep greens crisp and peaches juicy.
  • For extra protein, add grilled chicken or goat cheese.
