Chicken Curry

  • 2 pounds boneless skinless chicken breast, cubed

  • 1 tablespoon tomato paste
  • 2 tablespoons salted butter
  • 2 garlic cloves, chopped
  • 1 tablespoon chopped fresh ginger
  • 2 cups chopped broccoli florets
  • 2 1/2 cups canned coconut milk
  • Salt, to taste
  • 1/2 cup fresh chopped cilantro

Sesame Mango Topping

  • 1 diced mango
  • 1 cup chopped cilantro
  • 2 tablespoons toasted sesame seeds
  • 2 tablespoons lemon juice
  • Pinch of chili flakes

Instructions

  1. Cook the Chicken and Spices: In a large skillet over medium-high heat, heat the sesame oil. Add the cubed chicken breast, curry powder, and a pinch of salt. Cook for about 3 minutes, stirring occasionally to sear the chicken evenly.
  2. Add Pastes and Aromatics: Stir in the red curry paste, tomato paste, salted butter, chopped garlic, and fresh ginger. Cook the mixture for another 2 minutes, allowing the spices and pastes to blend and become fragrant.
  3. Add Vegetables and Coconut Milk: Add the chopped broccoli to the skillet, then pour in the canned coconut milk. Season with additional salt to taste. Reduce heat and simmer for 5 to 10 minutes, stirring occasionally, until the chicken is fully cooked through and the sauce has thickened to a creamy consistency.
