Ingredients

Shrimp and Vegetables

  • ⅛ teaspoon black pepper
  • 2 broccoli crowns (chopped into florets, about 4 to 5 cups)
  • 3 tablespoons water
  • 1 tablespoon minced garlic (about 3 cloves)
  • 1 ½ tablespoons minced fresh ginger (about a 1 ½ inch piece)
  • 4 green onions (chopped with white/light green and dark green parts divided)

Sauce

  • ⅓ cup low-sodium soy sauce
  • ¼ cup water
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 2 teaspoons sesame oil
  • 2 teaspoons cornstarch

Instructions

  1. Mix Sauce: In a small bowl or large liquid measuring cup, whisk together the soy sauce, water, honey, rice vinegar, sesame oil, and cornstarch until smooth. Set the sauce near the stove for easy access.
  2. Cook Shrimp: Heat 1 ½ tablespoons of canola oil in a large skillet or wok over medium-high heat. Add the shrimp in a single layer. Season with kosher salt and black pepper. Cook for 1 to 2 minutes per side until the shrimp are just pink and curl into a "C" shape. Remove shrimp to a plate and set aside to avoid overcooking.
  3. Sear Broccoli: Add the remaining 1 ½ tablespoons of canola oil to the skillet. Add the broccoli florets in a single layer. Let them cook undisturbed for 2 minutes to get a nice sear.
  4. Steam Broccoli: Stir the broccoli, pour in 3 tablespoons of water, and cover the skillet. Let the broccoli steam for 2 minutes until it becomes tender-crisp.
  5. Add Aromatics: Stir in the minced garlic, minced ginger, and the white/light green parts of the chopped green onions. Toss and cook for 1 to 2 minutes until the broccoli is crisp-tender and the aromatics fragrant.
  6. Toss with Sauce and Shrimp: Give the prepared sauce a quick stir if it has settled. Pour the sauce into the skillet along with the cooked shrimp. Toss everything to combine and cook for 1 to 2 minutes until the sauce thickens to a glossy coating on the shrimp and broccoli.
