Shirred Eggs is a classic, comforting breakfast dish featuring eggs baked in a buttered or oiled dish with rich cream and melted cheese. This simple yet elegant recipe offers creamy, flavorful eggs enhanced with fresh herbs and a touch of seasoning, perfect for a satisfying start to your day or a cozy brunch.

Ingredients

Ingredients

  • Butter or olive oil, for greasing the dish
  • 2 large eggs
  • 2 tablespoons heavy cream
  • 2 tablespoons grated or crumbled cheese (such as Gruyere, herbed goat cheese, Emmental, or Boursin)
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon finely sliced chives or other tender herbs

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it's ready for baking the eggs.
  2. Prepare Dish: Lightly grease a small baking dish or individual ramekins with butter or olive oil to prevent sticking and add flavor.
  3. Add Eggs and Cream: Carefully crack two large eggs into the greased dish, keeping the yolks intact. Then pour 2 tablespoons of heavy cream evenly over the eggs.
  4. Season and Cheese: Sprinkle 2 tablespoons of grated or crumbled cheese over the eggs. Season with kosher salt and freshly ground black pepper to taste.
  5. Bake: Place the baking dish in the preheated oven and bake for about 12–15 minutes, or until the egg whites are set but the yolks remain soft and creamy.
  6. Garnish and Serve: Remove from oven and sprinkle 1 teaspoon of finely sliced chives or other tender herbs over the top. Serve immediately while warm.

Notes

  • You can customize the cheese based on your preference; Gruyere adds nuttiness while goat cheese adds tang.
  • For a richer flavor, substitute heavy cream with crème fraîche or sour cream.
  • Adjust baking time slightly depending on desired yolk firmness.
  • Serve with toasted bread or a light salad for a complete meal.
