Instructions

  1. Sauté Shallots: Melt the butter in a saucepan or small pot over medium heat. Add the diced shallot and sauté for a few minutes, stirring occasionally, until the shallot becomes soft and fragrant.
  2. Simmer with Sherry: Pour in the sherry cooking wine and season the mixture with salt and black pepper. Bring it to a gentle simmer and cook while stirring occasionally until most of the liquid has reduced, concentrating the flavors.
  3. Add Cream and Thicken: Stir in the cream and continue simmering, stirring frequently, until the sauce thickens to your desired consistency. Keep it slightly thinner if you plan to serve it over pasta for easy coating; simmer longer for a thicker, richer sauce. Remove from heat and serve hot.
