Salmon and Vegetables

  • 2 salmon fillets (about 6 oz each)
  • 1 bunch asparagus, trimmed
  • 1/2 lb portobello mushrooms, sliced
  • 1 cup olives (preferably Kalamata or black olives, pitted)
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 zucchini, juiced and sliced
  • 1 red onion, sliced

Garlic Butter Sauce

  • 2 tbsp unsalted butter, melted
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 1/2 tsp dried oregano
  • Salt and pepper, to taste

Instructions

  1. Arrange Salmon and Vegetables: Place the salmon fillets in the center of a large baking sheet. Arrange the asparagus, portobello mushrooms, green and red bell peppers, zucchini slices, and red onion evenly around the salmon, either mixed together or separated according to preference. Keep olives aside for later.
  2. Prepare Garlic Butter Sauce: In a small jar or bowl, combine the melted butter, olive oil, minced garlic, dried oregano, salt, and pepper. Shake well or whisk thoroughly until the mixture is fully blended.
  3. Coat with Sauce: Drizzle the garlic butter sauce evenly over both the salmon and surrounding vegetables, ensuring everything is well coated to enhance flavor during cooking.
  4. Roast the Dish: Place the baking sheet in a preheated oven at 425°F (220°C). Roast for 25 minutes until the salmon is cooked through and the vegetables are tender and slightly caramelized.
