This Sesame Halva Brittle is a delightful combination of crunchy caramelized sugar, toasted sesame seeds, and the unique sweetness of shredded halva, topped with flaky Maldon salt for a perfect balance of flavors. It makes a crunchy, sweet treat that can be enjoyed as a snack or dessert and stores well in an airtight container or even in the freezer.

Ingredients

For the Sesame Seeds

  • 1 teaspoon olive oil
  • 1 cup sesame seeds

For the Caramel Brittle

  • 2 cups sugar
  • 100g (1 stick) butter
  • 1/3 cup light corn syrup
  • 1/2 teaspoon baking soda

For Topping

  • Shredded halva (quantity to sprinkle as desired)
  • Maldon flaky salt (to taste)

Instructions

  1. Toast the sesame seeds: Heat a skillet over medium heat and add the olive oil. Add the sesame seeds and stir to coat them evenly in oil. Continue cooking while stirring frequently to prevent burning until the sesame seeds are fully roasted and fragrant. Transfer them to a plate and allow to cool.
  2. Prepare baking sheet: Line a rimmed baking sheet with parchment paper to catch the hot brittle and make removal easier.
  3. Make the caramel mixture: In a medium saucepan, combine the sugar, butter, and light corn syrup. Stir gently with a spoon and bring the mixture to a boil over medium-high heat. Let it cook without stirring too much until the sugar caramelizes to a deep amber color and emits a slightly burnt aroma. This process should take about 10 to 12 minutes.
  4. Add baking soda and sesame seeds: Remove the pan from heat. Quickly stir in the baking soda, being cautious as the mixture will bubble up. Immediately add the toasted sesame seeds and fold them into the caramel mixture thoroughly.
  5. Form the brittle: Pour the hot mixture onto the prepared parchment-lined baking sheet. Using the back of a spoon, spread the mixture as thin and even as possible.
  6. Top and cool: While still warm, sprinkle shredded halva generously over the caramel. Then add a light sprinkling of Maldon flaky salt to enhance the flavor profile. Allow the brittle to cool completely and harden at room temperature.
  7. Break and store: Once cooled and solid, break the brittle into pieces by hand. Transfer the pieces into an airtight container for storage. The brittle freezes well if you want to keep it longer.
