Ingredients

Beef and Seasoning

  • 3-4 pound beef chuck roast
  • Kosher salt, to taste
  • Fresh cracked black pepper, to taste

Cooking and Braising

  • 2 tablespoons olive oil
  • 1 large yellow onion, sliced into large wedges
  • 10 cloves garlic, smashed
  • 2 tablespoons freshly grated ginger
  • 1 cup orange juice
  • 1 tablespoon orange zest
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup rice vinegar
  • 1 tablespoon toasted sesame oil
  • 14.5 ounce can beef broth

Garnish and Serving

  • Sliced green onion for garnish
  • Sesame seeds for garnish
  • White rice for serving
  • Roasted veggies for serving (optional)

Instructions

  1. Heat it up: Preheat your oven to 325 degrees Fahrenheit to prepare for slow braising.
  2. Prep the chuck: Cut the chuck roast into large 2-3 inch pieces. Pat each piece dry with paper towels, then season generously on all sides with kosher salt and freshly cracked black pepper to enhance flavor.
  3. Quick sear: Heat 2 tablespoons of olive oil in a 5-quart braising pan over medium-high heat. Working in batches, sear the chuck roast pieces until a deep golden-brown crust forms on all sides. Add more oil if needed between batches. Remove the seared meat and set aside.
  4. Sauté the aromatics: In the same pan, add the sliced onion along with a couple pinches of salt and pepper. Cook for about 2 minutes, stirring occasionally and adding oil if the pan seems dry. Then add the smashed garlic cloves and freshly grated ginger, seasoning with more salt and pepper. Cook while stirring frequently for 1 more minute until fragrant.
  5. Deglaze the pan: Pour a splash of beef broth into the pan and use a wooden spoon to scrape up the flavorful browned bits stuck to the bottom. This will deepen the flavor of your braising liquid.
  6. Finish the braising liquid: Stir in the orange juice, orange zest, soy sauce, brown sugar, rice vinegar, toasted sesame oil, and the remaining beef broth. Season with a couple more pinches of salt and pepper to balance the flavors.
  7. Nestle and braise: Place the seared chuck roast pieces back into the pan, nestling them into the braising liquid. Cover the pan with a tight-fitting lid and transfer it to the preheated oven. Braise for 3 to 3.5 hours, or until the beef is incredibly tender and easily shreds apart with two forks.
  8. Garnish and serve: Remove the braised beef from the oven. Shred the meat using two forks, then serve it over white rice. Drizzle generously with the rich braising sauce and garnish with sliced green onions and sesame seeds. Enjoy your delicious meal!

Notes

  • Make sure to sear the beef pieces well to develop a flavorful crust which enhances the overall taste.
  • Braising at a low oven temperature allows the meat to become tender and absorb all the aromatic flavors.
  • Adjust seasoning of salt and pepper to taste during cooking as soy sauce adds some saltiness.
  • Leftover braising sauce can be reduced on the stovetop to create a thicker gravy if desired.
  • This recipe pairs wonderfully with steamed white rice and roasted seasonal vegetables for a complete meal.
