Ingredients

Fruit and Nut Mixture

  • 1 1/2 cups pitted dates
  • 1 1/2 cups dried apricots
  • 1/2 cup golden raisins
  • 3/4 cup shelled pistachios
  • 2 tablespoons honey (for vegan use date syrup or agave)

Coating

  • 1/4 cup sugar
  • 1 teaspoon cinnamon

Instructions

  1. Prepare the Mixture: Place the pitted dates, dried apricots, golden raisins, shelled pistachios, and honey into a food processor.
  2. Process Until Combined: Pulse the ingredients for about 2 minutes until the mixture is smooth yet still retains some texture. Occasionally stop to break up any sticky clumps to ensure even processing.
  3. Prepare the Coating: In a separate bowl, combine the sugar and cinnamon thoroughly to make the cinnamon sugar coating.
  4. Shape the Truffles: Wet your hands slightly to handle the sticky mixture more easily. Form the mixture into balls approximately ¾ inch in diameter. The balls will be soft and sticky.
  5. Coat the Truffles: Dry your hands, then dip each ball into the cinnamon sugar mixture, coating it completely. Re-roll the truffle between your palms to smooth any rough edges and ensure the coating sticks well.
  6. Serve: Allow the truffles to rest at room temperature, then serve as a sweet treat or dessert.
