Instructions

  1. Preheat and prepare: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly with olive oil.
  2. Mix dry ingredients: In a large bowl, sift together the all-purpose flour, baking powder, baking soda, kosher salt, and cracked black pepper. Stir in the chopped fresh dill, crumbled feta, and lemon zest, ensuring they are evenly distributed.
  3. Combine wet ingredients: In a separate bowl, whisk together the eggs, extra virgin olive oil, milk, and lemon juice until the mixture is smooth and well combined.
  4. Incorporate wet and dry mixtures: Make a well in the center of the dry ingredients and pour in the wet mixture. Gently fold the ingredients together until just combined, taking care not to overmix to avoid tough muffins.
