Ingredients

Beef Patties

  • pounds lean ground beef
  • 1 teaspoon kosher fine salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 tablespoon Worcestershire sauce

Mushroom Gravy

  • 1 tablespoon olive oil (for searing patties)
  • 1 tablespoon olive oil (for cooking mushrooms and gravy)
  • 8 ounces cremini or white mushrooms, sliced
  • 1 small sweet onion, thinly sliced
  • 2-3 cloves garlic, minced
  • 1½ cups broth (beef or vegetable)
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 2 tablespoons cornstarch
  • 3 tablespoons filtered water (for slurry)
  • Black pepper, to taste

Instructions

  1. Prepare the Patties: In a mixing bowl, combine 1½ pounds lean ground beef with 1 teaspoon kosher fine salt, ½ teaspoon black pepper, ½ teaspoon garlic powder, ½ teaspoon onion powder, and 1 tablespoon Worcestershire sauce. Mix gently until just combined, then divide into 4 oval patties and press a shallow indent in the center of each to prevent puffing during cooking.
  2. Sear the Patties: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Place the patties in the skillet and sear for 4–5 minutes per side until nicely browned and cooked through. Remove the patties from the skillet and set them aside to rest.
  3. Cook Mushrooms: In the same skillet, add the remaining 1 tablespoon olive oil. Spread 8 ounces of sliced cremini or white mushrooms in a single layer. Let them cook undisturbed for 4-5 minutes to develop a deep brown color, then stir and continue cooking for another 5 minutes until fully browned.
  4. Sauté Onions and Garlic: Add 1 small thinly sliced sweet onion to the mushrooms and cook until the onions are soft and lightly caramelized. Add 2-3 cloves minced garlic and cook for about 30 seconds until fragrant.
  5. Add Liquids: Pour in 1½ cups broth, followed by 1 tablespoon soy sauce and 1 tablespoon oyster sauce. Stir well and bring the mixture to a gentle simmer.
  6. Make Slurry and Thicken Gravy: In a small bowl, mix 2 tablespoons cornstarch with 3 tablespoons filtered water until smooth. Slowly pour this slurry into the simmering gravy while stirring continuously. Simmer for 1–2 minutes until the sauce thickens and becomes glossy, coating the back of a spoon.
  7. Combine and Finish: Return the seared hamburger steaks to the skillet, spoon gravy over the top, and simmer gently for 3–4 minutes to allow flavors to marry. Season with additional black pepper to taste before serving.

Notes

  • Use lean ground beef (85-90% lean) for the best balance of flavor and juiciness.
  • Pressing a shallow indent in the patties helps keep them flat during cooking.
  • You can substitute beef broth with vegetable broth for a lighter flavor.
  • The cornstarch slurry is key for achieving a smooth, properly thickened gravy.
  • Serve the hamburger steak with mashed potatoes, rice, or steamed vegetables for a complete meal.
  • Leftovers store well in the refrigerator for up to 3 days and can be reheated gently on the stovetop.
