Ingredients

For the Hamburger Steaks

  • pounds lean ground beef
  • 1 teaspoon kosher fine salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 tablespoon Worcestershire sauce

For Cooking and Gravy

  • 2 tablespoons olive oil (divided)
  • 8 ounces cremini or white mushrooms, sliced
  • 1 small sweet onion, thinly sliced
  • 2-3 cloves garlic, minced
  • 1½ cups broth (beef or vegetable broth recommended)
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 2 tablespoons cornstarch
  • 3 tablespoons filtered water (for slurry)
  • Black pepper to taste

Instructions

  1. Prepare the Patties: In a mixing bowl, combine 1½ pounds lean ground beef with 1 teaspoon kosher fine salt, ½ teaspoon black pepper, ½ teaspoon garlic powder, ½ teaspoon onion powder, and 1 tablespoon Worcestershire sauce. Mix thoroughly, then divide the mixture into 4 oval-shaped patties. Press a shallow indent in the center of each patty to help them cook evenly.
  2. Sear the Steaks: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the hamburger steaks and sear for 4–5 minutes on each side until they develop a browned crust. Remove the steaks from the skillet and set aside to rest while you prepare the gravy.
  3. Cook Mushrooms: In the same skillet, heat the remaining 1 tablespoon olive oil. Add the sliced cremini or white mushrooms in a single layer, cooking undisturbed for 4-5 minutes to allow browning. Stir the mushrooms and cook for an additional 5 minutes to develop deeper flavor.
  4. Add Onions and Garlic: Add the thinly sliced sweet onion to the skillet and cook until soft and lightly caramelized, about 3-5 minutes. Then add the minced garlic and cook for 30 seconds until fragrant.
  5. Simmer the Broth Mixture: Pour in 1½ cups broth along with 1 tablespoon soy sauce and 1 tablespoon oyster sauce. Bring this mixture to a gentle simmer to meld the flavors together.
  6. Make and Add Slurry: In a small bowl, mix 2 tablespoons cornstarch with 3 tablespoons filtered water until completely smooth. Slowly pour this slurry into the simmering gravy while stirring continuously. Let it simmer for 1–2 minutes until the sauce thickens and becomes glossy, coating the back of a spoon.
  7. Combine and Finish Cooking: Return the seared hamburger steaks to the skillet, spoon the mushroom gravy over them, and simmer gently for another 3–4 minutes to marry the flavors. Taste and season with additional black pepper as desired. Serve hot.

Notes

  • For best texture, do not overmix the ground beef when forming patties.
  • You can substitute beef broth with vegetable broth for a lighter flavor.
  • If you prefer thicker gravy, you can add more cornstarch slurry gradually.
  • Leftover gravy can be stored separately and reheated for up to 3 days in the refrigerator.
  • Serve with mashed potatoes or steamed vegetables for a complete meal.
