A quick and flavorful sautéed broccoli rabe recipe featuring garlic, shallots, and a bright splash of lemon juice. Perfect as a side dish, this easy-to-make preparation highlights the natural bitterness of broccoli rabe balanced by aromatic olive oil and citrus.

Ingredients

Vegetables

  • 6 cups packed broccoli rabe, trimmed and roughly chopped (about 1 bunch)
  • 2 tablespoons minced shallot
  • 3-5 large garlic cloves, peeled and smashed

Others

  • 4 tablespoons olive oil, divided
  • 1/4 medium lemon, for squeezing the juice
  • Salt and pepper, to taste

Instructions

  1. Heat oil and sauté shallots: Heat 2 tablespoons of olive oil in a cast iron skillet over medium to medium-high heat. Add the minced shallot and sauté for about 1 minute until fragrant and slightly softened.
  2. Add garlic: Add the smashed garlic cloves to the skillet and sauté, stirring constantly, for 30 seconds to release their aroma without burning.
  3. Sauté broccoli rabe: Add the chopped broccoli rabe to the skillet along with the remaining 2 tablespoons of olive oil. Cook, stirring frequently, for about 10 minutes or until the broccoli rabe has wilted and cooked down to your preferred tenderness.
  4. Finish with lemon and seasoning: Remove from heat and squeeze fresh lemon juice over the greens. Season with salt and freshly ground pepper to taste. Toss lightly to combine and serve immediately.

Notes

  • If you prefer less bitterness, blanch the broccoli rabe in boiling salted water for 1-2 minutes before sautéing.
  • You can adjust the amount of garlic to taste or mince it finely if you prefer a less bold garlic flavor.
  • Use a good quality olive oil for best flavor and a cast iron skillet to achieve even sautéing.
  • Serve as a nutritious side dish with pasta, grilled meats, or fish.
