Ingredients

Potatoes

  • 3 lbs small potatoes

Seasoning & Oil

  • 1/4 cup olive oil
  • 4-6 garlic cloves, minced
  • 1/2 Tablespoon dry herbs, such as Simply Organic All Purpose Seasoning and/or Trader Joe's Onion Salt
  • Salt, ground black pepper, to taste

Garnish

  • 1 Tablespoon fresh herbs (parsley, green onions, dill, thyme, rosemary, etc.)

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 425°F (220°C) and place an extra-large rimmed baking sheet inside to heat along with the oven, ensuring a hot surface for roasting.
  2. Boil Potatoes: Wash the potatoes thoroughly, place them in a pot with just enough water to barely cover them, cover with a lid, and bring to a boil. Reduce the heat to a simmer and cook until potatoes are tender but not falling apart. Drain carefully.
  3. Season Potatoes: Transfer the cooked potatoes to a large bowl and add olive oil, minced garlic, dry herbs, salt, and pepper. Gently mix until all potatoes are evenly coated without breaking them.
  4. Arrange on Baking Sheet: Remove the hot baking sheet from the oven and spread the seasoned potatoes in an even layer, leaving behind any excess oil and garlic in the bowl.
  5. Smashed Potatoes: Use the bottom of a drinking glass to gently press down on each potato, flattening them slightly without breaking apart, repeating for all potatoes.
  6. Brush Remaining Oil and Garlic: Brush the leftover oil and garlic from the bowl over the tops of the smashed potatoes for extra flavor and to prevent the garlic from burning during roasting.
  7. Roast the Potatoes: Roast in the preheated oven for about 15 minutes, then flip the potatoes and roast for an additional 5 to 10 minutes until golden and crispy. Cooking times may vary depending on potato size.
  8. Garnish and Serve: Sprinkle fresh herbs like parsley, green onions, chives, dill, thyme, or rosemary over the roasted smashed potatoes just before serving for a fresh, aromatic finish.
