Potatoes and Feta

  • 1-2 large baking potatoes, washed and cubed

  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper

  • 1 head of garlic, top sliced off
  • 1 lemon, quartered
  • 1 tablespoon honey
  • ¼ cup (20 g) fresh basil, chopped

Instructions

  1. Prepare the Oven and Vegetables: Preheat your oven to 400°F (200°C). Wash the potatoes thoroughly and cut them into cubes for even roasting. Slice the top off the garlic head to expose the cloves.
  2. Season the Potatoes: In a large bowl, toss the cubed potatoes with 1 tablespoon of olive oil, dried thyme, dried oregano, salt, and black pepper ensuring each piece is well coated for maximum flavor.
  3. Arrange in Baking Dish: Place the seasoned potatoes in a single layer in a baking dish. Nestle the block of feta cheese in the center of the potatoes. Drizzle the remaining 1 tablespoon of olive oil over the feta and potatoes.
  4. Add Garlic and Lemon: Place the sliced garlic head close to the feta, and arrange the lemon quarters around the baking dish for roasting alongside the potatoes and cheese.
  5. Bake the Dish: Roast everything in the preheated oven for about 40-45 minutes. The potatoes should be golden and tender, and the feta soft and slightly browned on top.
