This Roasted Miso Broccoli recipe is a simple yet flavorful way to enjoy nutrient-packed broccoli florets coated in a delightful maple miso sauce. Roasting the broccoli gives it a tender texture with crispy edges, while the sweet and savory miso glaze adds depth and umami to the dish, making it a perfect side or light snack.

Ingredients

Broccoli

  • 2 large crowns broccoli, cut into florets (or a standard 12oz / 340 grams bag of pre-cut florets)
  • 1 Tbsp avocado oil (or other neutral oil)

Maple Miso Sauce

  • 1/4 cup mirin
  • 1 Tbsp miso paste (preferably white or yellow variety)
  • 1 Tbsp rice vinegar
  • 1 Tbsp avocado oil
  • 1 Tbsp pure maple syrup

Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C) to prepare for roasting the broccoli, which will enhance its flavor and texture.
  2. Prepare the broccoli: Toss the broccoli florets with 1 tablespoon of avocado oil, ensuring each piece is evenly coated for roasting.
  3. Make the sauce: In a small bowl, whisk together the mirin, miso paste, rice vinegar, avocado oil, and maple syrup until smooth and well combined to create the maple miso sauce.
  4. Roast the broccoli: Spread the broccoli florets evenly on a baking sheet lined with parchment paper or a silicone mat. Roast in the preheated oven for 15-20 minutes, tossing halfway through, until broccoli is tender and has crispy edges.
  5. Coat with miso sauce: Once roasted, transfer the broccoli to a mixing bowl and drizzle with the prepared maple miso sauce. Toss gently to coat the florets evenly without breaking them apart.
  6. Serve: Plate the glazed broccoli immediately to enjoy warm as a flavorful side dish or healthy snack.

Notes

  • For extra crispiness, spread the broccoli in a single layer without overcrowding the pan.
  • You can substitute avocado oil with other neutral oils such as grapeseed or canola oil.
  • Adjust the sweetness of the maple miso sauce by adding more or less maple syrup according to taste.
  • This recipe is naturally gluten-free if you use gluten-free miso paste and mirin.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in the oven for best texture.
