Ingredients

Chicken Marinade

  • 6 bone-in chicken thighs
  • 2 tbsp olive oil
  • 2 tbsp tomato paste
  • 3 tbsp fresh parsley, chopped
  • Juice of 1/2 lemon
  • 1 tsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tsp dried oregano
  • 1/4 tsp chili flakes
  • 2 tsp salt
  • 1/2 tsp black pepper

Potatoes

  • 1 lb baby potatoes, halved
  • Drizzle of olive oil
  • Salt and pepper, to taste

Instructions

  1. Marinate the Chicken: In a large bowl, combine olive oil, tomato paste, chopped parsley, lemon juice, smoked paprika, garlic powder, dried oregano, chili flakes, salt, and black pepper. Add the bone-in chicken thighs and toss until they are evenly coated with the marinade. Cover and set aside to marinate for 20 to 30 minutes while preparing the potatoes.
  2. Prepare Potatoes: Place the halved baby potatoes in a baking dish. Drizzle with olive oil and season with salt and pepper. Toss gently to coat the potatoes evenly, then spread them out in an even layer to ensure they roast properly.
  3. Assemble and Bake: Arrange the marinated chicken thighs skin side down over the potatoes in the baking dish. Cover the dish tightly with aluminum foil to retain moisture during the initial baking phase.
  4. First Bake: Preheat your oven to 375°F (190°C). Bake the covered dish for 50 minutes to allow the chicken to cook through and the potatoes to begin roasting.
  5. Final Bake: Remove the baking dish from the oven and carefully remove the foil. Flip each chicken thigh so the skin side is facing up. Increase the oven temperature to 425°F (220°C) and bake uncovered for an additional 30 minutes to crisp the chicken skin and deepen the potatoes' golden color.
  6. Serve and Enjoy: Once the chicken skin is crispy and the potatoes are tender, remove from the oven. Serve the dish hot, optionally accompanied by your favorite dipping sauces, for a flavorful Mediterranean-inspired meal.

Notes

  • Marinating the chicken for at least 20 minutes enhances the flavors, but you can marinate longer or overnight for deeper taste.
  • Using bone-in chicken thighs keeps the meat moist and flavorful during roasting.
  • Halving the baby potatoes helps them cook evenly and absorb the marinade flavors.
  • Covering the dish during the first bake prevents the chicken from drying out while ensuring tenderness.
  • Flipping the chicken skin side up for the final bake crisps the skin beautifully.
  • Adjust chili flakes to control the heat level according to your preference.
