A flavorful and easy recipe for Roasted Lemon Chicken Thighs with tender potatoes, garlic, and fresh herbs. The chicken is seared to crispy perfection on the stovetop before being roasted in the oven along with lemon slices and garlic for a bright, aromatic finish.

Ingredients

Chicken

  • 6 bone-in, skin-on chicken thighs
  • Salt and freshly ground black pepper, to taste
  • ¼ cup olive oil

Potatoes and Aromatics

  • 1 ½ pounds Eastern or Yukon Gold potatoes (680g), scrubbed and cut into 1-inch chunks
  • 1 lemon, sliced
  • 10 cloves garlic, peeled
  • ¼ cup chopped cilantro or parsley leaves

Instructions

  1. Preheat and Season: Preheat your oven to 425°F (220°C). Season the chicken thighs generously with salt and freshly ground black pepper on both sides.
  2. Sear the Chicken: Heat the olive oil in a roasting pan over medium-high heat on the stovetop. Place the chicken thighs skin-side down in the hot oil and sear for 5-7 minutes until the skin is golden and crispy. Flip the chicken thighs over to sear the other side briefly.
  3. Add Potatoes, Lemon, and Garlic: Add the potato chunks into the roasting pan, stirring them so they get well coated in the olive oil and chicken drippings. Nestle in the lemon slices and whole garlic cloves, tossing gently to combine everything evenly.
  4. Roast in Oven: Transfer the roasting pan with the chicken, potatoes, lemon, and garlic to the preheated oven. Roast for about 30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender when pierced with a fork.
  5. Finish and Serve: Remove the pan from the oven, sprinkle the chopped cilantro or parsley leaves over the chicken and potatoes, and give everything a gentle stir. Serve hot for a comforting, rustic meal.

Notes

  • For even cooking, choose potatoes that are uniform in size before cutting into chunks.
  • Using bone-in, skin-on chicken thighs keeps the meat juicy and flavorful.
  • Searing the chicken first helps develop a crispy skin and adds depth of flavor.
  • Feel free to use either cilantro or parsley depending on your preference.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
