Ingredients

Strawberries & Fennel

  • 1/2 lb Strawberries, cut in half or quarters
  • 1 Tbsp Fennel seeds
  • 1/3 Cup Sugar (divided)

Yogurt

  • 2 Cups Greek yogurt (preferably Chobani)

Instructions

  1. Prepare the Yogurt: Place a muslin cloth over a colander set on top of a bowl. Spoon the Greek yogurt onto the cloth. Bring the edges of the cloth together and gently squeeze to release excess moisture. Then, cover with the cloth and place a heavy utensil on top to press out more liquid. Refrigerate this setup for a few hours to thicken the yogurt.
  2. Roast the Strawberries: Preheat the oven to 350°F (175°C). In a baking pan, combine the prepared strawberries, a small amount of sugar, and fennel seeds. Bake for 30 minutes until the strawberries are softened and infused with the fennel aroma. Remove from the oven and allow to cool completely.
  3. Blend the Strawberry Purée: Transfer the cooled roasted strawberries to a blender and purée until smooth.
  4. Combine Yogurt and Purée: Add the thickened yogurt to the blender with the strawberry purée and the remaining sugar. Blend until the mixture is creamy and smooth with no lumps visible.
  5. Serve or Chill: The dish can be served immediately or poured into a container and refrigerated for further chilling to enhance flavor and texture.
