Ingredients

Vegetables

  • 1 Large Eggplant
  • 1 Medium Onion
  • 1 Large Orange Bell Pepper
  • 1 Large Red Bell Pepper
  • 1 Large Tomato
  • 3 Garlic cloves, minced

Seasonings and Dressing

  • 2 Tbsp. Parsley or Dill, minced
  • 3 Tbsp. Olive oil
  • 2 Tbsp. Apple Cider Vinegar or Wine Vinegar
  • 1 Tbsp. Za'atar (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C) to prepare for roasting the vegetables.
  2. Prepare the vegetables: Wash and dry the eggplant, onion, bell peppers, and tomato. Cut the eggplant into thick slices or cubes, slice the onion, and chop the bell peppers and tomato into large chunks.
  3. Roast the vegetables: Arrange the eggplant slices, onion, and bell peppers on a baking sheet. Drizzle with 2 tablespoons of olive oil and lightly season with salt and pepper. Roast in the oven for 25 to 30 minutes, turning once halfway through, until the vegetables are tender and slightly charred.
  4. Cool and chop: Remove the roasted vegetables from the oven and allow them to cool slightly. Once cooled, chop the vegetables into bite-sized pieces and transfer to a mixing bowl.
  5. Add fresh ingredients: Add the chopped tomato, minced garlic, and minced parsley or dill to the bowl with the roasted vegetables.
  6. Dress the salad: Pour in the remaining 1 tablespoon of olive oil and the 2 tablespoons of apple cider vinegar or wine vinegar. Sprinkle the za'atar if using, and season with additional salt and pepper to taste. Gently toss all ingredients to combine evenly.
  7. Serve: Let the salad sit for at least 10 minutes to allow flavors to meld before serving. Enjoy it at room temperature or chilled as a refreshing side or appetizer.

  • You can substitute any type of vinegar you prefer, such as balsamic or red wine vinegar, if you don’t have apple cider or wine vinegar.
