A refreshing, nutrient-packed Pineapple Kale Smoothie that combines the vibrant flavors of kale, pineapple, and banana with a creamy coconut milk base. Perfect for a healthy breakfast or energizing snack, this smoothie is naturally sweetened, has a hint of ginger for a subtle zing, and is enriched with chia seeds for added fiber and omega-3 fats.

Ingredients

Greens

  • 2 cups loosely packed kale, stems removed (or substitute with spinach)

Fruits

  • 1 heaping cup frozen pineapple
  • 1 large frozen ripe banana

Liquids

  • 3/4 cup light coconut milk from the can (or substitute with any milk of choice), plus more to thin if necessary

Add-ins

  • 1/2 tablespoon chia seeds
  • ½ inch hunk fresh peeled ginger, optional

Instructions

  1. Prepare the greens: Remove the stems from the kale leaves and loosely pack them to measure 2 cups. If using spinach, measure the same amount. Wash thoroughly and pat dry if needed.
  2. Add frozen fruits: Place the heaping cup of frozen pineapple and the large frozen ripe banana into your blender. Freezing the fruits beforehand helps achieve a cold, thick smoothie texture.
  3. Add liquids and chia seeds: Pour in 3/4 cup of light coconut milk and add 1/2 tablespoon of chia seeds. The coconut milk adds creaminess while chia seeds boost nutrition and help thicken the smoothie.
  4. Add ginger (optional): If you like a little zing, peel and add a ½ inch piece of fresh ginger to the blender. This adds a subtle spicy note and health benefits.
  5. Blend until smooth: Blend all ingredients on high until the mixture is completely smooth and creamy. If the smoothie is too thick, add a little more milk gradually until the desired consistency is reached.
  6. Serve immediately: Pour the smoothie into a glass and enjoy fresh for the best flavor and nutrient content.

Notes

  • You can substitute kale with spinach for a milder flavor.
  • Adjust the amount of coconut milk to reach your preferred smoothie thickness.
  • Adding fresh ginger is optional but adds a nice spicy twist.
  • Use frozen fruits to avoid adding ice and diluting the flavor.
  • Chia seeds can be soaked for a few minutes prior to blending if you prefer a smoother texture.
