This recipe provides two effective methods to make pumpkin puree using sugar (pie) pumpkins. The puree is perfect for pies, soups, breads, and other autumnal dishes. You can prepare the pumpkin either by roasting it for a richer, caramelized flavor or by cooking it on the stovetop for a quicker, lighter option.

Ingredients

Ingredients

  • 1 Sugar pumpkin (also known as pie pumpkin), about 2–4 pounds
  • Water (a splash, if using the stovetop method)
  • Olive oil (optional, for roasting, about 1-2 tablespoons)

Instructions

  1. Prepare the Pumpkin: Preheat your oven to 375°F (190°C) if roasting. Rinse the pumpkin thoroughly under water. Using a sharp knife, cut the pumpkin in half and scoop out the seeds and stringy pulp.
  2. Roasting Method: Place the halved pumpkins cut side down on a baking sheet lined with parchment paper. Optionally, drizzle with olive oil to add richness. Roast in the oven for about 45-60 minutes until the flesh is tender and easily pierced with a fork. Let the pumpkin cool slightly.
  3. Stovetop Method: Cut the pumpkin into chunks after removing seeds and pulp. Place the pumpkin pieces in a large pot and add just enough water to cover the bottom of the pot—about 1/4 to 1/2 cup. Cover with a lid and simmer on medium heat for 20-30 minutes until the pumpkin is soft and tender. Drain any excess liquid.
  4. Puree the Pumpkin: Scoop the flesh from the halves (roasted method) or use the cooked chunks (stovetop method) and transfer to a blender or food processor. Blend until smooth. If the puree seems too thick, add a little water to achieve desired consistency.
  5. Store the Puree: Use immediately in recipes or transfer to airtight containers. Refrigerate for up to 5 days or freeze for up to 3 months.

Notes

  • Choose sugar pumpkins (pie pumpkins) rather than large carving pumpkins as they are sweeter and have better flavor and texture.
  • Olive oil is optional but adds a nice depth of flavor when roasting.
  • Puree texture can be adjusted by adding small amounts of water if needed.
  • Seeds removed can be roasted separately as a snack.
  • Ensure pumpkin is fully cooked before pureeing for the best texture.
