Custard

  • 1 cup heavy cream

Instructions

  1. Preheat the Oven: Set your oven to 325°F (163°C) to prepare for baking the custards in a water bath.
  2. Heat Cream Mixture: In a small saucepan, gently heat the heavy cream and whole milk just until it starts to steam. Remove from heat and whisk in the brown sugar, cinnamon, ginger, allspice, cardamom, and nutmeg. Set this mixture aside to cool slightly.
  3. Mix Egg Yolks and Pumpkin: In a separate bowl, whisk together the egg yolks, pumpkin puree, vanilla paste, and molasses until smooth and combined.
  4. Combine Mixtures: Slowly whisk the slightly cooled spiced cream mixture into the pumpkin and egg yolk mixture, ensuring thorough blending.
  5. Strain the Custard: Pour the combined mixture through a fine strainer into a clean container (a glass measuring cup with a spout is ideal) to remove any solids, pressing gently with a spoon to extract all the liquid.
  6. Prepare Water Bath and Bake: Divide the custard mixture evenly into 5-6 small oven-safe ramekins or pots. Place these ramekins into a larger baking dish and carefully pour hot water into the baking dish until it reaches halfway up the sides of the ramekins. Bake for 35-40 minutes until the custard is mostly set but slightly jiggly in the center.
