Combining hearty oats with pumpkin puree and warm spices, it’s a comforting and nutritious way to start your day. Baked to a soft, set texture with a sweet cinnamon sugar topping, this recipe serves nine and is easy to prepare in under an hour.

Ingredients

Main Ingredients

  • 3 cups old fashioned oats
  • 1 (15 ounce) can pumpkin puree
  • ¾ cup light brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons cinnamon, divided (reserve ½ teaspoon for topping)
  • ½ teaspoon nutmeg
  • ¼ teaspoon ground cloves
  • ½ teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • 4 tablespoons unsalted butter, melted
  • 2 eggs
  • 1 ¼ cups milk

Topping

  • ½ tablespoon granulated sugar
  • ½ teaspoon cinnamon

Instructions

  1. Preheat and prepare dish: Preheat your oven to 350 degrees F. Lightly spray an 8 x 8 inch baking dish with non-stick cooking spray. Mix together the granulated sugar and ½ teaspoon cinnamon and set this cinnamon sugar mixture aside for topping later.
  2. Combine dry ingredients: In a large bowl, stir together the oats, light brown sugar, baking powder, remaining 1 ½ teaspoons cinnamon, nutmeg, ground cloves, ground ginger, and salt. This forms the flavorful base of your baked oatmeal.
  3. Mix wet ingredients: In a separate bowl, whisk the eggs, milk, pumpkin puree, vanilla extract, and melted unsalted butter until smooth and well combined. These wet ingredients add moisture and richness.
  4. Combine wet and dry mixtures: Pour the oat mixture into the pumpkin mixture and stir until all ingredients are evenly combined and the oats are fully coated.
  5. Assemble and top: Transfer the oat mixture into the prepared baking dish and spread it evenly. Sprinkle the reserved cinnamon sugar mixture evenly on top to create a sweet and spiced crust.
  6. Bake: Place the dish in the preheated oven and bake for 35-40 minutes, or until the oatmeal is set and slightly golden on top. It should feel firm to the touch.
  7. Cool and serve: Allow the baked oatmeal to rest for about 5 minutes after removing from the oven. This helps it set further for easier slicing. Serve warm, perfect on its own or with milk or yogurt.
