This Puff Pastry Pizza recipe offers a quick and versatile way to enjoy pizza with a light, flaky crust made from puff pastry. Perfect for appetizers, snacks, or a simple meal, it allows customization with your favorite sauces, cheeses, and toppings. The pastry is prebaked to achieve an airy, golden crust before adding the toppings and finishing in the oven for melted, bubbly cheese.

Ingredients

Pastry

  • 1 sheet frozen puff pastry, thawed according to package directions
  • Optional egg wash: 1 egg beaten with 1 tablespoon water

Toppings

  • 1/4 cup sauce (tomato sauce, white sauce, pesto, BBQ sauce, etc.)
  • 1 cup shredded mozzarella or cheese of choice
  • Pizza toppings of choice (such as pepperoni, mushrooms, bell peppers, olives, onions, etc.)

Instructions

  1. Preheat oven - Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup and to prevent sticking.
  2. Cut puff pastry - Carefully unroll the thawed puff pastry sheet onto the lined baking sheet. Using a paring knife, cut the pastry into 4 to 16 pieces depending on your preferred serving size, spacing them evenly with some room between each piece.
  3. Score border (optional) - For a neater crust appearance, use a paring knife to lightly score a 1 cm (1/2 inch) border around each piece without cutting all the way through, then prick the center area with a fork to prevent excessive puffing.
  4. Brush egg wash (optional) - Brush the tops of the pastry pieces with the beaten egg wash to achieve a shiny and golden crust when baked.
  5. Prebake crust - Bake the pastry pieces for 8-10 minutes until they puff up and turn lightly golden. Remove the baking sheet from the oven and prepare for toppings.
  6. Add toppings - Gently press down the centers of each piece to create a well for toppings. Spread sauce evenly over the centers, leaving the crust edges clear. Sprinkle shredded cheese generously and add desired pizza toppings.
  7. Bake with toppings - Return the baking sheet to the oven and bake for an additional 10 minutes or until the cheese melts, bubbles, and starts to brown slightly.

Notes

  • Use a variety of sauces like tomato, pesto, BBQ, or white sauce depending on the flavor profile you desire.
  • Feel free to customize toppings with your favorites such as vegetables, meats, or herbs.
  • The scoring step helps keep the edges puffed separately from the center toppings, creating a defined crust.
  • Egg wash is optional but recommended for a beautiful golden finish on the crust.
  • Cutting the pastry into smaller squares makes perfect bite-sized appetizers, while fewer bigger pieces work better for meals.
  • Make sure the puff pastry is fully thawed before cutting to prevent cracking or tearing.
