Ingredients

Puff Pastry & Cheese

  • 2 sheets puff pastry, thawed
  • 8 ounces brie, cut into bite-sized pieces

Egg Wash

  • 1 egg yolk
  • 1 tablespoon water

Flavorings & Toppings

  • 4 tablespoons fresh thyme leaves
  • ½ cup fig jam (or your favorite jam)
  • 2 tablespoons honey, for drizzling
  • ½ teaspoon flaky sea salt, or more to taste

Instructions

  1. Prepare the oven and puff pastry: Preheat your oven to 400°F (200°C). Lightly flour a clean surface and roll out the thawed puff pastry sheets if they are not already flat. Cut each sheet into small squares, approximately 2 to 3 inches on each side.
  2. Make egg wash: In a small bowl, whisk together the egg yolk and water until combined to create an egg wash. This will give the pastry a beautiful golden color when baked.
  3. Assemble the bites: Place the puff pastry squares on a parchment-lined baking sheet. Lightly brush the edges of each square with the egg wash. Add a small spoonful of fig jam in the center of each square, followed by a bite-sized piece of brie cheese on top of the jam. Sprinkle fresh thyme leaves over each bite.
  4. Bake: Place the baking sheet in the preheated oven and bake for 12 to 15 minutes or until the puff pastry is puffed and golden brown and the brie is melted.
