These Pizza Muffins are a quick and delicious snack or appetizer that combine fluffy biscuit dough with classic pizza flavors. Made with Bisquick mix, Italian seasoning, mozzarella, pizza sauce, and mini pepperonis, they bake up golden and gooey, perfect for a fun and easy bite-sized treat.

Ingredients

Main Ingredients

  • 2 cups Bisquick baking mix
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • 1 cup whole milk
  • 2 large eggs
  • ½ cup shredded mozzarella cheese
  • ¾ cup pizza sauce (plus extra for serving)
  • 1 cup shredded mozzarella cheese (for topping)
  • Mini pepperonis (about 4-5 per muffin)

Instructions

  1. Prepare the muffin tin. Preheat the oven to 375℉. Line a 12-cup muffin tin with parchment paper liners or lightly spray each cup with nonstick cooking spray to prevent sticking.
  2. Mix dry ingredients. In a large bowl, whisk together the Bisquick baking mix, Italian seasoning, and garlic powder until evenly combined and no lumps remain, ensuring even flavor throughout.
  3. Mix wet ingredients. In a separate smaller bowl, whisk together the eggs and whole milk until thoroughly combined to create a smooth liquid base.
  4. Combine wet and dry. Pour the egg and milk mixture into the dry ingredients bowl. Gently stir with a spatula just until combined. Avoid overmixing to keep the batter slightly thick but scoopable.
  5. Add cheese to batter. Fold in ½ cup shredded mozzarella cheese evenly into the batter for cheesy pockets inside the muffins.
  6. Fill muffin cups. Divide the muffin biscuit dough evenly among the prepared cups, filling about three-quarters full to allow room for rising.
  7. Bake initial muffins. Bake in the preheated oven for 15-18 minutes until the tops turn lightly golden and a toothpick inserted in the center comes out clean, indicating doneness.
  8. Add pizza toppings. Remove the muffin pan from the oven. Immediately spread about 1 tablespoon of pizza sauce on top of each muffin, sprinkle with additional shredded mozzarella cheese, and top with 4-5 mini pepperonis per muffin.
  9. Melt the cheese topping. Return the muffin pan to the oven and bake for an additional 2-3 minutes until the cheese topping is melted and bubbly, enhancing flavor and appearance.
  10. Cool and serve. Let the muffins cool in the pan for 5 minutes before removing. Serve warm with extra pizza sauce on the side for dipping. Enjoy your tasty pizza muffins!

Notes

  • Do not overmix the batter to keep muffins light and fluffy.
  • Use parchment paper liners or spray well to prevent sticking.
  • Adjust the number of mini pepperonis according to size and personal preference.
  • Serve warm for best taste and melted cheese texture.
  • These muffins can be stored in an airtight container and reheated before serving.
