Ingredients

For the Chocolate Ganache

  • 200g (7 oz) dark chocolate (60–70% cocoa), chopped
  • 200ml (¾ cup + 1 tbsp) heavy cream
  • 1 tbsp unsalted butter (optional, for extra shine)

For the Pistachio Mousse

  • 150g (1 ¼ cups) shelled pistachios (unsalted)
  • 3 tbsp granulated sugar
  • 1 tsp pure vanilla extract
  • 250ml (1 cup) heavy cream, cold
  • 100g (½ cup) mascarpone cheese or cream cheese, softened
  • A pinch of salt

Garnish (Optional)

  • Chopped roasted pistachios
  • Chocolate curls or shavings
  • Edible gold dust or sea salt flakes

Instructions

  1. Prepare the Chocolate Ganache: Heat the heavy cream in a saucepan over medium heat until it just begins to simmer. Remove from heat and pour over the chopped dark chocolate in a heatproof bowl. Let it sit for 2-3 minutes, then stir gently until smooth and glossy. Stir in the unsalted butter if using to add shine. Set aside to cool to room temperature.
  2. Make the Pistachio Paste: Place the shelled pistachios and granulated sugar in a food processor. Blend until finely ground and combined into a smooth paste, scraping down the sides as needed. Add the vanilla extract and a pinch of salt, blending again until fully incorporated.
  3. Whip the Cream: In a chilled bowl, whip the cold heavy cream until soft peaks form. Be careful not to overwhip.
  4. Combine the Mousse Ingredients: In another bowl, beat the mascarpone cheese or cream cheese until smooth and creamy. Gently fold in the pistachio paste followed by the whipped cream, combining everything carefully to maintain the light and airy texture.
  5. Assemble the Mousse: Transfer the pistachio mousse to serving glasses or bowls. Chill in the refrigerator for at least 2 hours or until set.
  6. Apply the Ganache: Once the mousse is set, spoon or pour the cooled but still pourable chocolate ganache over the top of each mousse serving evenly.
  7. Garnish and Serve: Decorate with chopped roasted pistachios, chocolate curls or shavings, and a sprinkle of edible gold dust or sea salt flakes. Serve immediately or keep chilled until ready to serve.
