Ingredients

Saffron Bloom

  • 3 cubes ice

Chicken

  • 4 whole chicken leg quarters (bone-in, skin-on)
  • 1 teaspoon kosher salt
  • 2 tablespoons olive oil

Vegetables & Spices

  • 1 large yellow sweet onion (thinly sliced)
  • 1 large green bell pepper (cut into one-inch pieces)
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup water

Instructions

  1. Bloom the Saffron: Grind the saffron threads using a pestle and mortar, then sprinkle the ground saffron over the ice cubes in a small bowl. Leave at room temperature until the ice melts and the saffron releases a red-orange aromatic liquid, known as bloomed saffron.
  2. Prepare the Chicken: Pat dry the chicken leg quarters with paper towels, then evenly sprinkle kosher salt on both sides to season.
  3. Sear the Chicken Skin-Side Down: Heat an oven-safe pan over medium heat. Place the chicken pieces skin-side down and cook for 7 to 8 minutes until the skin turns golden and fat begins to render.
  4. Add Bloomed Saffron: Pour 1 tablespoon of the bloomed saffron into the pan. Gently shake the pan so the saffron infuses into the chicken skin for enhanced flavor and color.
  5. Flip and Sear the Other Side: Turn the chicken over and sear the other side for another 7 to 8 minutes until golden. Then, remove the chicken from the pan and set aside.
  6. Sauté the Aromatics: In the same pan, heat the olive oil over medium heat. Add the thinly sliced onion and sauté until translucent and golden at the edges.
  7. Add Bell Pepper and Spices: Stir in the green bell pepper and cook for 1 minute. Then add turmeric, ground black pepper, and cinnamon, cooking for an additional 5 minutes until fragrant.
  8. Return Chicken to Pan: Nestle the seared chicken leg quarters into the onion and pepper mixture to combine flavors.
  9. Add Water and Simmer: Pour 1/2 cup of water into the pan. Bring to a simmer over high heat, then cover and reduce the heat to medium-low. Cook gently for 20 minutes to tenderize the chicken.
  10. Preheat Oven: While the chicken simmers, preheat your oven to 400°F (200°C) to prepare for roasting.
