This Pepper Steak Stir Fry is a quick and delicious meal featuring tender flank steak and crisp bell peppers tossed in a savory honey soy sauce. Perfect for a healthy weeknight dinner, it combines sweet and savory flavors with a satisfying texture.

Ingredients

For the Sauce:

  • ½ cup (120 ml) soy sauce
  • ½ cup (120 ml) water
  • 3 tablespoons (21 g) cornstarch
  • 2 tablespoons (42 g) honey

For the Stir-Fry:

  • 1 tablespoon vegetable oil, divided
  • 1 red bell pepper, cored, seeded, and thinly sliced
  • 1 green bell pepper, cored, seeded, and thinly sliced
  • pounds flank steak, thinly sliced
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. Prepare the sauce: In a medium bowl, whisk together the soy sauce, water, cornstarch, and honey until smooth and set aside.
  2. Sear the steak: Heat half the vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced flank steak, season with garlic powder, salt, and pepper, then cook for 2-3 minutes until browned but not fully cooked through. Remove the steak from the skillet and set aside.
  3. Cook the peppers: In the same skillet, heat the remaining vegetable oil. Add the sliced red and green bell peppers and stir-fry for about 3-4 minutes until they are tender-crisp.
  4. Combine and finish: Return the steak to the skillet with the peppers. Stir the prepared sauce again and pour it over the meat and vegetables. Cook, stirring frequently, for another 2-3 minutes until the sauce thickens and coats the steak and peppers evenly.
  5. Serve: Remove from heat and serve immediately, ideally over steamed rice or noodles for a complete meal.

Notes

  • For extra flavor, marinate the steak in a little soy sauce and garlic powder for 30 minutes before cooking.
  • Use a very hot pan to get a good sear on the steak without overcooking it.
  • Feel free to add onions or mushrooms for more vegetable variety.
  • Serve with steamed jasmine or basmati rice to soak up the sauce perfectly.
