Peanut Butter Rice Krispie Treats with Chocolate Swirl are a delightful twist on the classic marshmallow cereal treat. Combining the creamy richness of peanut butter with the crispy texture of Rice Krispies and topped with a luscious chocolate swirl, these no-bake bars are perfect for satisfying sweet cravings with a nostalgic touch and a gourmet finish.

Ingredients

For the Base:

  • 6 cups Rice Krispies cereal
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter (1 stick)
  • 1 (10 oz) bag mini marshmallows (about 5 1/2 cups)

For the Topping:

  • 1 cup creamy peanut butter
  • 1 1/2 cups semi-sweet chocolate chips (or milk chocolate, if preferred)

Instructions

  1. Prepare the Base Mixture: In a large pot over low heat, melt the unsalted butter completely. Add the bag of mini marshmallows to the pot and stir continuously until the marshmallows are fully melted and smooth.
  2. Add Peanut Butter: Stir in 1 cup of creamy peanut butter into the melted marshmallow mixture until fully incorporated and smooth, creating a sticky, creamy base.
  3. Combine with Rice Krispies: Remove the pot from heat and immediately add the 6 cups of Rice Krispies cereal. Fold the cereal gently but thoroughly into the marshmallow and peanut butter mixture, ensuring all the cereal is evenly coated.
  4. Press into Pan: Transfer the mixture to a greased or parchment-lined 9x13 inch baking pan. Using a spatula or your hands (lightly greased), press the mixture firmly and evenly into the pan to form an even layer. Allow it to cool and set slightly.
  5. Prepare the Chocolate Swirl Topping: In a microwave-safe bowl, combine 1 1/2 cups of semi-sweet chocolate chips and 1 cup of creamy peanut butter. Microwave in 20-30 second intervals, stirring between each, until the mixture is smooth and fully melted.
  6. Swirl the Topping: Pour the melted chocolate and peanut butter mixture over the pressed Rice Krispie base. Using a knife or toothpick, gently swirl the topping to create a marbled effect, blending but not fully mixing the chocolate and peanut butter visually.
  7. Chill and Set: Place the pan in the refrigerator for at least 1 hour to allow the topping to harden and the treat bars to set firmly.
  8. Serve: Once set, remove from the refrigerator and cut into squares or bars. Serve immediately or store in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.

Notes

  • For an extra crunch, add chopped peanuts or sprinkle flaky sea salt over the chocolate swirl before chilling.
  • Substitute almond butter or sunflower seed butter for a different nutty flavor or for those with peanut allergies.
  • Use milk or white chocolate chips instead of semi-sweet for a sweeter topping.
  • Ensure the marshmallow mixture is not overheated to avoid scorching the butter or peanut butter.
  • Press the cereal mixture firmly to prevent the treats from crumbling when cut.
