A refreshing Peach Caprese Salad combining sweet, juicy peaches with creamy fresh mozzarella, fragrant basil, and a tangy white balsamic vinaigrette, perfect for a light and elegant appetizer or side dish.

Ingredients

Vinaigrette

  • 4 tablespoons white balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon minced fresh basil
  • 1 teaspoon freshly ground peppercorns
  • Pinch coarse kosher or sea salt

Salad

  • 2 large peaches, sliced 1/2" thick with skin on
  • 8 oz fresh mozzarella, sliced from fresh ball
  • 1 bunch fresh basil leaves

Instructions

  1. Make the vinaigrette: In a small bowl, combine the white balsamic vinegar, extra virgin olive oil, minced fresh basil, freshly ground peppercorns, and a pinch of kosher or sea salt. Whisk well to blend all ingredients thoroughly, then set the vinaigrette aside in the refrigerator to chill and allow flavors to meld.
  2. Prepare the peach and mozzarella slices: Slice the peaches about 1/2 inch thick, leaving the skin on for texture and color. Also slice the fresh mozzarella ball into similar thickness slices to match the peaches for layering.
  3. Layer the salad: On a serving platter or individual plates, alternate arranging slices of peaches, fresh mozzarella, and fresh basil leaves. Stack them attractively, creating an appealing layered effect that showcases the vibrant colors and textures.
  4. Drizzle and serve: Just before serving, gently drizzle the chilled vinaigrette evenly over the arranged salad layers. This adds a bright, tangy flavor boost that complements the sweetness of the peaches and the creaminess of the mozzarella. Serve immediately and enjoy this fresh, summery salad.

Notes

  • Using ripe, juicy peaches is key to the salad's flavor balance—choose peaches that are fragrant and slightly soft.
  • You can substitute white balsamic vinegar with a light red balsamic if desired, but it may alter the color slightly.
  • Fresh mozzarella balls from the deli are best for this recipe due to their creamy texture.
  • For a slightly sweeter dressing, add a teaspoon of honey or maple syrup to the vinaigrette.
  • This salad is best served fresh to preserve the texture of the peaches and mozzarella.
