This Peach Blueberry Cobbler is a delightful blend of juicy peaches and sweet blueberries baked under a golden, tender biscuit-like batter. Ingredients

Filling

  • 4 cups sliced peaches (3-4 peaches)
  • 1 1/2 cups blueberries
  • 1 tablespoon fresh lemon juice
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1 teaspoon vanilla extract or vanilla bean paste

Batter

  • 6 tablespoons unsalted butter
  • 1 cup white whole wheat flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 3/4 cup milk (dairy or non-dairy, whole milk recommended)

Instructions

  1. Prepare the filling: Add the sliced peaches, blueberries, granulated sugar, fresh lemon juice, ground cinnamon, ground ginger, and a pinch of salt to a saucepan. Cook over medium heat, stirring often, until the sugar dissolves, about 2-3 minutes.
  2. Add vanilla and set aside: Remove the saucepan from the heat, stir in the vanilla extract or vanilla bean paste, and set the fruit filling aside to cool slightly.
  3. Melt the butter: Cut the unsalted butter into pieces and place them in a 9×13-inch baking dish. Put the dish in the oven as it preheats to 350°F (175°C), allowing the butter to melt fully.
  4. Make the batter: In a mixing bowl, combine the white whole wheat flour, granulated sugar, baking powder, salt, ground cinnamon, and ground ginger. Gradually pour in the milk while stirring until just combined to form a batter.
  5. Assemble the cobbler batter: Remove the baking dish from the oven, carefully pour the batter over the melted butter, and smooth it into an even layer.
