Ingredients

For the Caramelized Onions

  • 1 yellow onion, thinly sliced
  • 1 tablespoon butter

For the Patties

  • 1 pound ground beef (80/20)
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon butter

For the Sandwich Assembly and Grilling

  • 8 slices bread (rye or sourdough)
  • 8 slices Swiss or cheddar cheese
  • 2 tablespoons butter (divided, for grilling sandwiches)

Instructions

  1. Caramelize the Onions: Add 1 tablespoon butter to a large sauté pan over medium heat. Add the thinly sliced onions and cook, stirring occasionally, until browned and slightly caramelized, about 15 minutes. Once done, set aside the caramelized onions.
  2. Form and Season Patties: Shape the ground beef into 4 thin, oval-shaped burger patties, roughly matching the shape and size of the bread slices. Season each side generously with salt and pepper.
  3. Cook the Patties: Add 1 tablespoon butter to the same sauté pan and increase heat to medium-high. Place the patties in the pan and cook for 2 to 3 minutes on each side or until they reach your preferred doneness. Remove from heat.
  4. Assemble the Sandwiches: Layer each sandwich starting with one slice of bread, followed by one slice of cheese, a cooked burger patty, one-quarter of the caramelized onions, another slice of cheese, and then the final slice of bread. Repeat with remaining ingredients.
  5. Prepare Pan for Grilling: Wipe out the sauté pan to remove any residue, then melt 1/2 tablespoon butter over medium heat.
  6. Grill the First Side: Place two sandwiches in the pan. Cook for 2 to 3 minutes, or until the bottom bread forms a dark golden-brown crust and the cheese starts melting. Press gently with a spatula to ensure even browning and help meld the sandwich together.
