  • 15 ounces cannellini beans, rinsed and drained (one can)
  • 1 cup small-cut pasta or protein pasta
  • Shredded Parmesan cheese or chopped fresh parsley (to serve, optional)

Instructions

  1. Brown the ground beef: In a dutch oven over medium heat, cook 1 pound of ground beef until it is no longer pink, breaking it up as it cooks to ensure even browning and texture.
  2. Sauté the vegetables: Add the diced sweet onion, sliced carrots, diced red bell pepper, chopped celery, and minced garlic to the browned beef. Cook, stirring frequently, for 6-8 minutes until the vegetables are softened and fragrant.
