Ingredients

Mousse Base

  • 1 can cream of milk (creme de leite) or 12 oz heavy cream
  • 1 cup passion fruit juice (from concentrate)

Optional Topping

  • 3/4 cup passion fruit pulp with seeds
  • 4 tbsp sugar
  • 2 tbsp corn starch
  • 1 cup water

Instructions

  1. Prepare the Mousse Base: Add condensed milk, cream of milk (or heavy cream), and passion fruit concentrate into a blender cup. Pulse for about 30 seconds, not exceeding 45 seconds to maintain a smooth yet airy texture. Alternatively, you can whisk these ingredients thoroughly until well combined.
  2. Chill the Mousse: Pour the blended mixture onto a pie dish or serving bowls and refrigerate for 6 hours to allow the mousse to set properly.
  3. Make the Optional Passion Fruit Topping: In a saucepan, whisk together sugar and corn starch with water until dissolved. Place the saucepan over medium heat, then add the passion fruit pulp with seeds. Continuously whisk the mixture until it begins to bubble and thickens slightly, about 10 minutes.
  4. Cool the Topping: Remove the saucepan from heat and let the passion fruit topping cool completely before spooning it over the chilled mousse.
