These Parmesan Truffle Roasted Fingerling Potatoes are a luxurious and flavorful side dish featuring crispy roasted fingerling potatoes infused with aromatic truffle oil, a sprinkle of truffle salt, and finished with freshly grated Parmesan cheese, lemon zest, and parsley. Perfectly tender inside with a golden, crispy bottom, this recipe elevates simple fingerling potatoes into an elegant and savory treat.

Ingredients

Potatoes and Seasoning

  • 1 ½ pounds (680 grams) fingerling potatoes, cut in half lengthwise
  • 2 tablespoons avocado oil
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper

Truffle and Garnish

  • 1 tablespoon truffle oil (white truffle oil recommended)
  • Sprinkle of truffle salt
  • Finely grated Parmesan cheese (to taste)
  • 1 tablespoon finely chopped fresh parsley
  • Zest of 1 lemon (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it's hot and ready for roasting the potatoes.
  2. Prep Potatoes: Wash and halve the fingerling potatoes lengthwise to create a flat surface for roasting.
  3. Season Potatoes: Place the halved potatoes in a large bowl or directly on a baking sheet. Drizzle with avocado oil, then sprinkle with sea salt and freshly ground black pepper. Toss gently to coat all pieces evenly.
  4. Arrange on Baking Sheet: Spread the potatoes out in a single layer on the baking sheet with the cut side facing down. This helps them develop a crispy, golden surface.
  5. Roast the Potatoes: Bake in the preheated oven for 30 to 35 minutes, or until the potatoes are tender inside and have a crisp, golden bottom side. Timing may vary depending on the size of your potatoes.
  6. Add Truffle Flavor: As soon as the potatoes come out of the oven, drizzle the truffle oil over them and sprinkle with truffle salt to taste. Gently toss to evenly distribute the truffle flavors.
  7. Garnish and Serve: Transfer the potatoes to a serving bowl. Sprinkle generously with freshly grated Parmesan cheese, chopped parsley, and lemon zest if using. Serve immediately for the best flavor and texture.

Notes

  • Feel free to adjust the amount of truffle oil and Parmesan cheese according to your taste preferences.
  • Lemon zest is optional but adds a lovely fresh brightness to balance the richness.
  • Make sure the potatoes are spread out well on the baking sheet to ensure even roasting and crispiness.
  • You can substitute avocado oil with other neutral oils with a high smoke point, such as grapeseed or sunflower oil.
  • For a more intense truffle flavor, you can add extra truffle salt or drizzle a little more truffle oil just before serving.
