Ingredients

Salmon

  • 4 (4 oz each) salmon fillets
  • 1 tablespoon olive oil
  • Kosher salt & black pepper, to taste

Parmesan Crust

  • 1/2 cup plain panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon mayonnaise
  • 1 tablespoon chopped fresh parsley (or 1 teaspoon dried parsley)
  • 1 teaspoon garlic powder

Instructions

  1. Preheat Oven: Preheat your oven to 375℉ and line a rimmed baking sheet with parchment paper to prevent sticking and for easy clean-up.
  2. Prepare Salmon: Place the salmon fillets skin side down on the prepared baking sheet. Pat each fillet dry with a paper towel to ensure the crust adheres properly. Drizzle olive oil evenly over the salmon and season generously with kosher salt and black pepper to taste.
  3. Make Parmesan Mixture: In a small bowl, combine the panko breadcrumbs, grated parmesan cheese, mayonnaise, chopped parsley, and garlic powder. Mix thoroughly until all ingredients are well incorporated and form a slightly moist crumbly mixture.
  4. Apply Crust: Evenly spread the parmesan breadcrumb mixture over the top of each salmon fillet, pressing gently to adhere the crust firmly to the fish.
