Ingredients

Rice and Eggs

  • 1 cup white long- or medium-grain rice (cooked and cold)
  • 4 eggs
  • 3 tablespoons oil (divided)

Vegetables

  • ½ medium onion (finely chopped)
  • ½ cup cabbage (finely shredded)
  • ½ cup carrots (finely diced)
  • 2 green onion stalks (sliced)

Seasonings and Sauces

  • 1 tablespoon regular soy sauce
  • 1 teaspoon oyster sauce
  • 1 teaspoon toasted sesame oil
  • ½ teaspoon salt
  • ⅓ teaspoon freshly ground black pepper

Instructions

  1. Prep the ingredients: Chop all the vegetables finely and break apart any clumps in the cold cooked rice to ensure even cooking. Keep all ingredients ready and within reach as the cooking process is quick.
  2. Cook the eggs: Crack the eggs into a bowl and set aside. Heat a pan over medium heat with 1 tablespoon of oil, coating the surface. Pour in the eggs, season with salt and freshly ground black pepper, and scramble gently to your liking. Transfer the cooked eggs to a plate and set aside.
  3. Stir-fry the veggies: Increase the heat to high and add the remaining 2 tablespoons of oil to the same pan. Once hot, add the chopped onion and stir continuously for a few seconds.
  4. Add the diced veggies: Toss in the finely shredded cabbage and diced carrots. Stir-fry for about one minute, aiming to maintain their vibrant color and a slight crispness.
  5. Add the rice: Add the cold cooked rice to the pan and stir and toss continuously for 1 to 2 minutes to heat through and combine flavors.
  6. Mix in the egg and sauces: Add the scrambled eggs back into the pan along with the soy sauce, oyster sauce, toasted sesame oil, additional crushed pepper, and salt. Stir thoroughly until all ingredients and flavors are well incorporated. Taste and adjust seasoning if needed.
  7. Finish with green onions: Add the sliced green onions, give the mixture a final good mix, turn off the heat, and serve immediately for best taste and texture.

Notes

  • For best results, use day-old cooked rice that has been chilled; it helps prevent clumping and creates the ideal fried rice texture.
  • Feel free to substitute vegetables with your favorites or add protein like cooked chicken or shrimp.
  • Adjust soy and oyster sauce according to your salt preference and taste.
  • Use a wok or a large skillet to ensure even and quick cooking when stir-frying.
